Honey Roasted Tahini Carrots

I just roasted these in the oven today and they were so good I had to share! I always roast my carrots with honey or maple syrup but today I decided to go for a more Mediterranean flare and sprinkle them with cumin along with the honey and then drizzle them with yummy tahini sauce and fresh parsley for serving. They couldn’t be any easier! Would be great with a Moroccan tagine stew or even just a roasted chicken. Check it out!


You will need:


2 lbs Carrots

2 tbsp Olive oil

1 tsp Cumin

1 tsp Salt

1/2 tsp Pepper

2 tbsp Honey

Drizzle of tahini

Sprinkle of fresh parsley

Preheat your oven to 375 degrees. You don’t want it too hot or your carrots will burn because of the sugar in the honey. Peel and cut your carrots and then toss in a large bowl with the olive oil, seasonings and honey. Bake for 30 minutes total, making sure you toss them around a few times while roasting so they don’t burn on one side. When ready to serve, drizzle with tahini and sprinkle with fresh parsley!
