Jalapeño Pineapple Slaw

This slaw is sweet from the pineapple, tangy and has a mild kick from the jalapenos. It's so good with my pulled pork recipe in a bun or just as a side to some grilled ribs or burgers at any bbq. Here's what you will need to make it at home:



1/2 jalapeno de-seeded and sliced very thinly.

1 bag of coleslaw mix (if it doesn't have red cabbage, finely slice 1/2 a small one)

2 cups pineapple chunks

juice of the pineapple from the container of pre-cut, or juice from the can if using the kind canned in fruit juice)

1 cup mayonnaise

1 tsp black pepper

2 tsp salt

2 scallions (spring onions), finely sliced

3 tbsp white vinegar or apple cider vinegar

Pinch of sugar


In a large bowl, toss together your bag of cabbage and carrot for the classic coleslaw mix. Add in your red cabbage if it's not already included. Add in your scallions, jalapeno and pineapple. Then pour in the pineapple juice liquid, your vinegar, mayo, salt, pepper and pinch of sugar. Toss together and leave for about an hour in the fridge for the flavors to infuse.


It's that simple!
