Overnight Oats

Everyone needs an overnight oat recipe. I make this one for my clients all the time and leave it in the fridge. I add in some extra nutrients in with chia seeds which are packed with omega fatty acids and antioxidants. And of course I make it dairy free with a clean almond milk without any added gums or oils. Top it off with any of your favorite toppings and seasonal fruit and leave it in the fridge in small individual containers for 3-5 days for breakfasts on the go!

You will need:

1 cup organic old fashioned oats

1 cup organic almond milk

1/2 cup organic non fat Greek yogurt or plain/vanilla vegan coconut yogurt

4 tbsp chia seeds

1/4 cup finely shredded dried coconut

3 tbsp maple syrup or honey

1 tsp cinnamon (optional)

1 tsp vanilla extract

Stir it all together in a large bowl or jar to make. Leave it overnight or at least 6 hours to set and then you can separate it in to individual pots for easy breakfasts on the go.

Add berries, seasonal fruit like figs, extra coconut flakes, some hemp seeds for crunch and added goodness and/or nuts/nut butters on top and enjoy!
